Classic Gyros with Homemade Tzatziki Sauce and Pita Bread

Ingredients:

For the Gyro base-

2 packages baby bella mushrooms (or your favorite mushroom!)

2 TBS avocado oil

1/2 tsp each: garlic powder, onion powder, coriander, thyme, rosemary, cayenne pepper, salt, and pepper

1 tsp smoked paprika

1 tsp parsley

For the Tzatziki Sauce-

1 Cup dairy-free plain yoghurt

3/4 Cup unpeeled, finely diced cucumber (remove seeds)

2 TBS fresh dill (you may use 2 tsp dried dill, but the flavor is much better with fresh)

1 tsp fresh mint (optional)

Juice from 1/2 a lemon (2 TBS)

2 garlic cloves, minced

1/2 tsp salt

For the Pita Bread-

1 Cup + 2 TBS AP flour

3/4 Cup dairy-free yoghurt

2 tsp baking soda

1/2 tsp salt

Directions:

For the Pita Bread-

1. Combine all ingredients in a mixing bowl until it forms a smooth ball.

2. Cut the dough ball 6 ways (almost like cutting pie) then, roll into 6 smaller balls of dough. 

3. Roll out very thin (don't worry, these will puff up while frying!) and pan fry on medium heat.

For the Tzatziki Sauce-

1. Simply combine all ingredients in a bowl and store in the fridge until ready to use!

For the Gyro Base-

1. Slice mushrooms into relatively thick slices and add into a large bowl.

2. Toss in avocado oil and sprinkle all of the spices on top. Toss once more and pan fry until medium firm.

Enjoy with freshly sliced tomato, thinly sliced red onion, and thinly sliced lettuce!
